Chapter 4. Starter Discard Recipes
I had no idea that my sourdough saga would garner such interest. Please bear in mind that I am a newbie to this craft and there is much to learn and my posts are in no way an exhaustive account of the process. This is simply my experience with sourdough (thus far). I do welcome your comments and feedback. On that note I did field comments about recipes for sourdough starter discard. And there are many. Because chapter 1 was a chapter and not a book; I chose not to include information on that topic. Because there is an interest I have decided to ‘test drive’ some recipes and include them in this post.
Let’s just start with the misnomer “discard”. To label something as a discard is to imply that it is of no further use or value. Au contraire mon frere. Waste not, want not I say.
Adding sourdough starter discard to your baking not only adds another depth of flavour, it is also upping the nutrient value. Sourdough contains iron, manganese, calcium, B1-B6, B12, folate, zinc, potassium, thiamin, niacin, riboflavin, selenium, iron, manganese, magnesium, phosphorus, and vitamin E. It ups the acid in the gut (good). And has a lower glycemic index (very good).
So keeping it simple I thought…. well…., battered anything. Onion rings? Sure. Just add some spices to that starter. Or how about apple rings? Ooh, Yes! Please!
Fried Apples
Equipment
- deep frypan with lid
Ingredients
- 2 apples Granny smith; peeled and sliced into rings
- 1-2 cups cooking oil
- 1 cup sourdough starter discard
- cinnamon and sugar to taste
Instructions
- Peel and slice apples into rings.
- Dip apple rings into starter to coat.
- When a small amount of starter dropped into the oil reasily sizzles; carefully add apples to pan and cook until brown on both sides.
- Let the cooked pieces drain on cooling rack or paper towel.
- Sprinkle with (or dredge in) cinnamon and sugar mix.
- Enjoy warm.

Fried Flatbread
Equipment
- frying pan and spatula
Ingredients
- 1/2-1 cup sourdough starter discard
- 2 Tbs oil or butter
Instructions
- Add-ins: green onions; capers; olives; chopped apple; raisins. Add whatever you feel like 😉
- Fry on both sides until nicely brown and enjoy!
